Chocolate & Peanut Butter Truffles
I love making raw balls for an easy and healthy snack, or to eat with a cup of chai or matcha tea in the afternoon. There are so many different variations you can make. Here I have made some plain chocolate ones as well as with peanut butter, so you can mix it up if you like. And if you have a nut allergy you can just stick to the chocolate ones and roll the balls in ingredients like coconut or cacao powder. On the left are the plain chocolate truffles, coated with hazelnuts,

Creamy Pasta Bake
Thank the earth for cashews because they make they the creamiest sauces and even cheeses. You would not know this recipe was vegan at all. It's super creamy and moreish, perfect if you're craving a carby meal without the guilt. A couple of people tried this recipe who are not vegan and they couldn't tell it was vegan and they loved it! Crunchy Hazelnut & Almond Granola Clusters
Who doesn't love Granola for breakfast? I especially love how versatile it is. You can eat it with yoghurt, milk, yoghurt and milk, just on it's own as a crunchy snack, topped on smoothies or acai bowls, it's super easy to make into bars as well instead of granola to take on the go. It is so simple to make you just throw whatever ingredients you want together, add sweetener, nut butter or coconut oil to stick it all together and viola! This recipe is super delicious! And extr

Vegan Cashew Cream Caramel Slice
This is great to make as slices or a cake. Surprise your family or friends by making them this exciting and delicious dessert! So many yummy layers! An oat based layer followed by cashew cream, a date caramel layer and finally, chocolate of course. It may look complicated but it really is easy. Once you have a food processor or high speed blender, it's just about blending all the ingredients in each layer up, it basically does half of the work for you. Enjoy! Vegan Cashew Cre
