Banana & Coconut Porridge


This is the most comforting bowl of porridge you'll get your hands on this winter. The warm, sweet banana goes perfectly with hearty warm oats, complemented by a perfect crunch from the walnuts, coconut and cacao nibs. It's porridge with a gourmet twist. Banana & Coconut Porridge

Ingredients

1 ripe banana

1/2 cup oats 1/2 tsp coconut oil 1 cup Alpro coconut milk

Method

Slice your banana into diagonal slices.

Put the coconut oil in a pan. When melted place the banana slices in the pan. Squeeze a little bit of agave on each banana slice and fry on each side until golden brown. Poor the oats and coconut milk in a pan and cook for a few minutes stirring until you have a porridge like consistency. Poor into a bowl to serve and top with the banana slices, toasted coconut flakes, walnuts, cacao nibs and cinnamon.
