I love granola, it is always a staple in my kitchen. It is essential for topping smoothie and açaí bowls and I love having it with coconut chia pudding and coconut yoghurt and fruit. I also love just having it with some plant milk or snacking on it on it's own of course..

Crunchy Chocolate Chunk Protein Granola
1 1/3 cup oats
Handful of chopped nuts (almonds, walnuts, blanched hazelnuts)
2 hpd tbsp smooth cashew butter (or other nut butter of choice)
2 tbsp coconut oil
2 tbsp cacao nibs
1 scoop vanilla protein (use code "lauren20" here)
1 tbsp cacao powder
Around 2 tbsp agave (or other liquid sweetener of choice)
Good pinch of pink himalayan salt
Tiny pinch of cinnamon (optional)
Dairy-free dark chocolate
1 chopped medjool date
Preheat oven to 180°C.
Add all ingredients to a large bowl except the dark chocolate and chopped medjool date. Mix well.
If mixture is too dry add more of the wet ingredients (agave, cashew butter, coconut oil).
Spread mixture out on a baking tray lined with baking paper and place in the oven for 15 minutes, keep an eye on it towards the end so it doesn't overcook.
Chop dark chocolate into chunks, you can use as much or as little as you want.
After the granola is cooked and looking crunchy, let cool before adding your chocolate chunks and chopped medjool date pieces.
Store in room temperature for up to two weeks.
