Healthy snack bars are one of my favourite things to have on hand. As a model they are perfect to bring with me to eat on-the-go, or for an afternoon snack with a cup of tea! They are super quick and easy to make yourself. You know what you are putting into it, and can make it super healthy with any ingredients that you like. You will almost never find my snack draw empty, but on the sad occasion that it is, I will make my own!
This recipe is full of natural ingredients including oats, nuts, seeds, and a natural sweetener from the dates. Nuts and seeds contain healthy fats your body needs, fibre, protein, vitamins and minerals. That is health in a bar right there.
Easy No-Bake Muesli Bars
(makes 6 large bars)
1 cup oats
1 1/2 cups medjool dates (around 16)
1/2 cup puffed rice millet
1/3 cup seeds (sunflower & pumpkin)
1/2 cup nuts (I used almond & walnuts)
2 tbsp chia seeds
2 tbsp flax meal
Add dry ingredients into a large bowl, except for the dates.
Blend dates in a food processor or high speed blender until it forms a paste.
Scoop date paste into the bowl with the other ingredients and mix until well incorporated and sticky. It's better to use your hands for this.
Line a bread tin with parchment paper and poor in the mixture. Press down firmly with your hands or a spatula. Place in the freezer for about an hour to firm up.
Cut into slices and store in the freezer.
Notes: Storing them in the freezer keeps the bars firm. Store in the fridge if you would like them softer.
