There are so many ways and textures you can make cookies. I was craving some sort of chocolate chunk cookie one weekend, so I whipped up this quick recipe asap. This recipe is so simple and easy to make, and I love how something as delicious as a choc chunk cookie can be healthy at the same time! You could probably even have these for breakfast, it is made from oats.. What am I saying, of course you can have these for breakfast!
Gluten Free Choc Chunk Oat Cookies
(makes about 10 cookies)
Wet ingredients: 2 tbsp coconut oil 3 tbsp maple syrup 1 tbsp almond butter 1/4 cup plant milk Dry ingredients: 2 cups blended gluten free oats 1/2 cup almond meal 1 tsp baking powder Pinch of pink himalayan salt 1/2 cup chopped dairy-free dark chocolate
Preheat oven to 180°C. Mix the wet ingredients together in one bowl and the dry ingredients together in another bowl. Add the dry ingredients to the wet ingredients and mix. Add the chocolate chunks and stir them through. Roll mixture into balls and place the balls on a baking tray lined with parchment paper.
Press the balls down a little with the palm of your hand. Bake in the oven for about 12 mins. Let cool slightly before eating, or just jump straight in!
