Creamy Pasta Bake

Thank the earth for cashews because they make they the creamiest sauces and even cheeses.

 

You would not know this recipe was vegan at all. It's super creamy and moreish, perfect if you're craving a carby meal without the guilt. A couple of people tried this recipe who are not vegan and they couldn't tell it was vegan and they loved it!

 

 

 

 

 

 

 

Creamy Pasta Bake (vegan, gluten free)

(serves 4)

 

Ingredients

 

1 packet of pasta (around 500g) (I used Doves Farm brown rice pasta)

1 white onion

1 red pepper (or 1/2 of two different coloured peppers)

1-2 cups mushrooms

1 bag of spinach (around 100g)

1 tsp garlic granules 

1 tsp mixed herbs

1-2 tsp paprika

Pink himalayan salt to taste

Black pepper to taste

1/2 a jar (250g) of tomato sauce

 

Cashew Cream Sauce:

1 cup soaked cashews (soak for at least 4 hours)

1/2 cup nutritional yeast

1 tsp garlic granules

Pink himalayan salt to taste

Black pepper to taste

Juice from 1 lemon

Around 1/3 cup soy milk (this is a rough estimate, add as you go along so it is thick but not too thick)

 

 

Method

 

Preheat oven to 200ºC.

Add pasta to a pot of boiled water and cook as instructed on the packet.

Add onion to a big pan and stir until translucent.

Add mushrooms, peppers and spices. Stir through.

Drain the soaked cashews and add to a blender with pink salt, black pepper, garlic granules, lemon juice, nutritional yeast and soy milk.

Add the cashew cream sauce to the pan with the tomato sauce and stir though.

Drain pasta when cooked and add to a baking dish.

Pour everything from the pan over the pasta and mix until incorporated. If you want add some vegan cheese on top or bread crumbs.

Place in the oven for 10 minutes, then serve it up!

 


Notes: If you want you can also just mix the pasta into the pan with the sauce and veggies and eat it just like that instead of baking it in the oven!
