Salted Caramel Seed Bircher Muesli

I love bircher's because they are so quick and easy to prepare when you are short on time! You simply just soak the muesli the night before, take it out of the fridge in the morning, top it with your favourite toppings and voila! This seeded bircher will be sure to give you plenty of energy and vitamins that you need to get you through any day, while keeping your stomach feeling light!






Salted Caramel Seed Bircher Muesli


Salted Caramel Seed Muesli:

(makes 4 servings)



1 cup oats (use gluten-free to make this recipe gluten-free)

1/2 cup buckwheat groats

2 pitted medjool dates (chopped small)

2 tbsp Whitworths salted caramel mixed seeds

1 tbsp Whitworths four seed mix

1 tsp maca powder

1 tbsp flaxseed meal

1 tbsp chia seeds

1 tbsp cacao nibs



Mix all ingredients together in a large bowl.

Store in an air-tight container at room temperature.



Date Salted Caramel Paste:



6 pitted medjool dates

Good pinch pink himalayan salt

1 tsp maca powder (optional)

4 tbsp filtered water



Blend all ingredients together in a high power blender or food processor until smooth.



Salted Caramel Seed Bircher:

(1 serving)



1/2 cup of muesli

1/2 cup plant-based milk

1 heaped tbsp coconut yoghurt (or other creamy dairy-free yoghurt of choice)



Add all ingredients to a bowl, mix well and store in the fridge overnight.

Top with banana, blueberries, Whitworths salted caramel mixed seeds and date salted caramel paste and enjoy!
