Apple & Walnut Bread

I love making a healthy and delicious bread like this because it is so versatile. You can have it for a snack with some almond butter and agave or for dessert with some dairy-free custard or even take it on-the-go for a nutritious, quick, satisfying breakfast. I love banana bread so this time I decided to mix it up and make apple and walnut bread!

Apple & Walnut Bread

Ingredients
Dry:
1 cup buckwheat flour
1 cup oat flour
2 tsp baking powder
1/2 cup walnuts (save a few for topping)
Wet:
1 medium sized apple (diced into small chunks)
4 tbsp agave or maple syrup
1 tsp cinnamon
3/4 cup Alpro soy milk
1 tbsp almond butter
1 tsp vanilla extract
2 chia eggs (2 tbsp chia seeds, 4 tbsp water, leave for a couple of minutes to let chia seeds become gel like)
Optional:
Method
Preheat oven to 180°C.
Add all dry ingredients to a bowl and stir through.
Make a rough hole in the middle of the dry ingredients and add all the wet ingredients.
Mix until well incorporated. If the batter is too dry add a dash of soy milk.
Pour mixture into a bread tin lined with parchment paper and top with some walnuts.
Bake in the oven for 45 mins. Let cool slightly before slicing.
It tastes great with Alpro dairy-free custard and a sprinkle of cinnamon. Or I also absolutely love a warm slice with some almond butter and a squeeze of agave or maple syrup.
