Raspberry & Coconut Chia Pudding with Chocolate Mousse

I absolutely love chia pudding, it's light, fresh, delicious and filling. Chia seeds are high in omega-3 fatty acids and calcium and contain protein, fibre, antioxidants and other essential vitamins and minerals. That's a lot of goodness in a tiny little seed!
Chia pudding is super versatile, you can make it into so many different ways. I love adding chia seeds to oats to make overnight chia oats, or having it with nice cream or in/on top of a smoothie bowl.
You can even have it as a dessert. I love mixing cacao powder and a bit of agave with chia pudding to make it a healthy but delicious chocolatey treat! What is dessert without chocolate right?
Here I have made coconut chia pudding layered with Seed & Bean coconut and raspberry vegan chocolate pieces, raspberries, healthy chocolate mousse, and topped with more raspberries, chocolate and toasted coconut flakes.

Coconut & Raspberry Chia Pudding with Chocolate Mousse
Ingredients

Chia pudding:
30g (3 tbsp) chia seeds
1/2 cup plant milk
1 tbsp coconut yoghurt
Chocolate Mousse:
1 frozen banana
1/2 avocado
1 tbsp cacao powder
3 tbsp coconut yoghurt
1 tsp agave or liquid sweetener of choice
Dash of plant milk
Toppings:
raspberries
chocolate of choice
coconut flakes
Method
In a bowl or glass mason jar mix chia pudding ingredients together.
Leave to set in the fridge for at least an hour.
Place a few chopped chocolate pieces and raspberries on top of the chia pudding or around the edges if in a mason jar.
Top with chocolate mousse - blend all chocolate mousse ingredients together. Make sure it's not runny.
Top with more raspberries, chocolate pieces and coconut flakes.
