Creamy Cashew Protein Bars

Sometimes the best recipes are created when you don't put too much thought into it! This one was created when I was dancing around in my kitchen intuitively adding ingredients.
It turned out to taste so similar to creamy white chocolate! But super healthy and with added protein. YUM!!
I love making protein bars because you can eat them as a snack throughout the day, for a quick on-the-go breakfast or as a dessert too!

Creamy Cashew Protein Bars
(makes 8 medium-large bars)

Ingredients
10 medjool dates
1/4 cup almond meal
1/2 cup oats
1 scoop of vanilla plant protein
2 heaped tbsp smooth cashew butter
Small pinch of cinnamon
Good pinch of pink himalayan salt
Handful of nuts (almonds, walnuts, blanched hazelnuts)
Handful of seeds (pumpkin, sunflower, flax)
1-2 tbsp cacao nibs
2-4 squares (20g) dairy-free dark chocolate
Method
Blend all ingredients together in a food processor or high power blender except for nuts, seeds, cacao nibs and dark chocolate.
When mixture starts to become a little sticky add in the nuts and seeds and pulse until nuts are roughly chopped.
Add in the cacao nibs and stir through without blending.
Line a bread tin with non-stick parchment paper and pour the mixture into it pressing down firmly so the mixture is tightly together.
Melt the dairy-free dark chocolate to drizzle over the top.
Freeze for at least two hours to set.
Cut into 8 medium-large bars and store in the freezer to keep bars firm.
