Crunchy Choc Peanut Butter Slices

I love making slices, bars and balls because they are super versatile, easy and quick to make and nutrient dense! The perfect healthy and delicious afternoon snack, quick breakfast or dessert!

Crunchy Choc Peanut Butter Slices

Ingredients
12-15 medjool dates
2/3 cup almond meal
1/2 cup smooth peanut butter
2 heaped tbsp cacao powder
1 heaped tbsp flaxmeal
1 tbsp hemp hearts
1 tsp maca powder (optional)
1 scoop vanilla plant protein (optional)
Handful of peanuts
Handful of cacao nibs
Handful of buckwheat
20g (2-4 squares) of dairy-free dark chocolate
Pinch of sea salt
Method
Pit dates and add all ingredients except peanuts, cacao and buckinis to a food processor and blend until the mixture can stick together well enough.
If mixture is too dry and crumbly, add a bit more dates or peanut butter.
Add peanuts and buckinis to the food processor and roughly blend so they are chopped.
Add cacao nibs and mix through without blending.
Line a bread tin with baking paper and add the mixture pressing it down firmly until it is compressed.
Melt the chocolate and smooth over the top of the compressed mixture.
Top with a pinch of sea salt and buckinis for decoration and extra crunch.
Set in the freezer for a couple of hours and cut into squares or rectangles.
Store in the freezer.
