No-Bake Chocolate & Vanilla Protein Bars

I love making my own quick and easy bars.. You know exactly what you're putting into it and they are perfect to take on-the-go!
These bars are great to eat pre or post workout or as a snack throughout your day to keep your energy levels up as it contains protein, healthy fats, carbohydrates and essential nutrients. They can even be made gluten-free by using gluten-free oats.

I love using a vanilla plant protein powder for most bars and slices I make as it gives it a naturally sweet taste and adds that extra protein!

No-Bake Chocolate & Vanilla Protein Bars
(makes 12 medium size bars)

Ingredients
1 1/3 cups (138g) oats (use gluten-free to make this recipe GF)
15 medjool dates
2 tbsp hulled hemp seeds
2 tbsp flaxmeal
1 1/2 scoops (45g) of chocolate & vanilla protein
2 tbsp desiccated coconut
1 tsp maca powder
2 tbsp almond butter
Good pinch pink himalayan salt
2 tbsp cacao nibs
2-4 squares (20g) dairy-free dark chocolate
Method
Blend all ingredients together in a food processor or high power blender except for cacao nibs and dark chocolate.
When well blended add in the cacao nibs and stir through without blending.
Line a bread or small-medium baking tin with non-stick parchment paper and pour the mixture into it pressing down firmly so the mixture is tightly together.
Melt a few squares of dairy-free dark chocolate to drizzle over the top.
Freeze for at least two hours to set.
Cut into 12 bars and store in the freezer to keep bars firm or in the fridge for up to 2 weeks.
