Oven Baked Veg & Quinoa Bowl (oil free)
This recipe is super delicious. Full of colours, flavours and lot's of nutrients and protein, and is super easy to make. I love making a big batch of this to store in the fridge, and it is so easy take in a container for an on-the-go lunch or dinner. You will save money, and you know exactly what ingredients has gone into it.
Oven Baked Veg & Quinoa Bowl
1 cup sweet potatoes (chopped into squares)
1 cup quinoa
2 cups water
1 can of cooked black beans (drained and rinsed)
1 diced red onion
1 chopped red bell pepper
1 spring onion
1-2 cups baby spinach
1 tsp paprika
1 tsp black pepper
1 tsp mixed herbs
1 tsp pink himalayan salt
Preheat oven to 200ºC.
Place sweet potato, red pepper and red onion on a non stick tray or a parchment paper lined tray. Cook for 25 minutes.
Cook quinoa in a large pot with the water and bring to a boil. Once boiled put lid on and simmer for 10 minutes, until all of the water is absorbed.
When the vegetables are cooked and the quinoa has absorbed all the water, place the vegetables in the pot with the quinoa and mix together with the spring onion, spinach, black beans, and spices.
Mix until everything is combined and cooked.
Garnish with some sesame seeds or avocado if you like!
