Raw Vegan Snickers Slice

This recipe is perfect to bring to a friend or family event or party. I made this for Christmas Eve and it was popular! Everybody loved it and said it tasted even better than a snickers bar. I totally agree. There are three layers of fun and different textures that are seriously delicious!

Raw Vegan Snickers Slice

Ingredients
Base:
1 cup cashews (soaked for at least 3 hours)
3/4 cup gf oats
5 medjool dates
Squeeze of agave or maple syrup
Pinch of pink himalayan salt
Caramel:
15 medjool dates
2 tbsp smooth peanut butter
Squeeze of agave or maple syrup
Good pinch of pink himalayan salt
Dash of water
Chocolate topping:
1/3 cup cacao powder
2 tbsp coconut oil
4 tbsp agave or maple syrup (or to taste)
Pinch of pinch himalayan salt
1/3 cup salted peanuts
Method
Blend all of the base layer ingredients in a food processor or high speed blender until it is all sticking together.
Line a bread tin with parchment paper and pour the base layer into the bread tin. Even out and press down firmly, then place in the freezer while you make the caramel layer.
Wash or rinse your blender then blend all the caramel ingredients together until smooth.
Pour onto base layer and even it out. Place back in the freezer to firm up a little.
Pour some boiling water into a large bowl. Place another bowl with the chocolate ingredients (except peanuts) on to the boiling water to melt down.
Keep stirring until melted and then stir through the peanuts.
Place back in the freezer until hardened.
Cut into slices and store in the freezer.
Notes: The chocolate topping can melt easily. It is best to store in the freezer, or in the fridge if you like it soft and gooey.
